Vinification: Analytical Notes: Vineyards:
Sustainably farmed vineyards planted to volcanic basalt. Hand harvested to 40kg baskets, heavy triage, then racked to small stainless steel tanks for fermentation. Conventional fermentation with cultivated yeasts, 8 months aging in stainless steel with extended lees contact.
Alcohol Content: 12 %
In the middle of the Atlantic Ocean, this unique terroir is situated at the base of the volcanic mountain of Pico. The vines for this wine are planted in the rock cracks at the foothills of the volcanic mountain so close to the ocean that the locals say you can hear the crabs singing.
The vineyards are protected from strong salty ocean winds by walls of rock known as “currais”.
